Eunice Rongstad was born May 29, 1929, in Slayton, MN to Paul and Edith Engberg. She grew up on their family farm. Eunice graduated from Tracy High School in 1947. On December 1, 1950 Eunice married Chad Rongstad of Lamberton, MN. Chad and Eunice lived in Fergus Falls, Hanska, Willmar and moved to Alexandria in 1963. Chad managed the Lampert Lumber Company. Eunice was active in the First Baptist Church of Alexandria, she taught Sunday School and often served in the kitchen. Eunice enjoyed homemaking, cooking, baking, gardening, and canning. She was also an excellent sewist. In 1982 the Rongstads moved to Mesa, AZ where they were involved as resident managers of retirement apartments. Eunice passed away on Sunday, December 15, 2019. She was 90 years old. Eunice had 10 grandchildren, and 14 great-grandchildren.
She is survived by her husband, Chad; her 4 daughters and their families, Lynette (Clay) Jones, Janice (Rick) Johnson, Lori (Tom) Peterson, Joann (Greg) Schalow all of AZ; her sister Phyllis Mattson of Hutchinson, MN; and many nieces and nephews.
A private family burial was held on July 7, 2020 at Kinkead Cemetery.
