Healthy Foods Summit: Minnesota Leaders in Food and Health

World-renowned experts in food, health and agricultural science will share the latest research and best practices at the Healthy Foods Summit 2012, set in Chanhassen for Monday and Tuesday, Oct. 1 and 2.

Co-sponsored by the Minnesota Landscape Arboretum in partnership with the University of Minnesota Healthy Foods, Healthy Lives Institute (HFHL), the summit this year will focus on "Minnesota Leaders in Food and Health."

Day One of the summit, meeting at TCF Bank Stadium, features U of M scientists providing new research on honeybees, food safety, obesity and more; on Day Two, local food groups and practitioners will meet at the Arboretum to share best practices and research related to food systems and health.

Special guest speakers on Monday will include Sonny Ramaswamy, Ph.D., director of the National Institute for Food and Agriculture; Marla Spivak, Ph.D., U of M bee researcher; Michael Osterholm, Ph.D., director of the U of M Center for Infectious Disease Research and Policy; Steven Hecht, Ph.D., from the U of M Masonic Cancer Center; and Al Levine, Ph.D., director of the Minnesota Obesity Center and dean of the U of M College of Food, Agricultural and Natural Resource Sciences.

Bryant Terry, chef, food justice activist and author, will be a special highlight, speaking on "Good Food: An Everyday Right - How Do We Make This Happen?" from 7 to 8:30 p.m. Monday, Oct. 1, at the Urban Research and Outreach-Engagement Center at 2001 N. Plymouth Ave., Minneapolis.

Terry also will be keynote speaker on Tuesday, Oct. 2, at the Arboretum, discussing "Cooking Up Food Justice," while demonstrating a simple, inexpensive vegan dish. The Tuesday agenda will also feature open discussion and case studies presented by community leaders in the Minnesota food scene.

Summit registration fees are as follows: Monday, Oct. 1: $95 for the public; $65 for Arboretum members; and $30 for students. Tuesday, Oct. 2: $65 for everyone.
