I’ve gained a renewed appreciation for quick suppers from a skillet. As a young mother, that sometimes meant the meal began in a box packaged with everything needed except the meat. Column – 'Fantastico!' I finally found secret to Mexican dish
In 1963, we students in our Spanish class took a bus to Minneapolis where we dined at a Mexican restaurant called “La Casa Coronado.” I’d been raised on Minnesota meat-and-potato dinners and that is why that Mexican meal was a revelation I’ve never forgotten.
