Scandinavian Koldtbord on Syttende Mai planned in Morris

Norwegians and Norwegian Americans celebrate Norwegian independence on May 17 with parades in Norway and with special events and foods in America. Norskfødt Lodge of Sons of Norway at Morris features a special lunch this year, an authentic modern Scandinavian koldtbord (cold table).

Norwegians and Norwegian Americans celebrate Norwegian independence on May 17 with parades in Norway and with special events and foods in America. Norskfødt Lodge of Sons of Norway at Morris features a special lunch this year, an authentic modern Scandinavian koldtbord (cold table). The format observed in Scandinavian countries is a buffet where diners return for several small self-serve helpings of make-your-own sandwiches followed by spring desserts.

The menu of five courses includes spring garden asparagus cream soup, three herring salads, marinated salmon, filled eggs, a selection of breads, beet and cucumber salads, cold meats, hot meat balls and fish balls in sauce, potatoes, caramelized carrots and red cabbage. The dessert table features almond cake with Kviteseid rhubarb compote, caramel pudding, and Jarlsberg, Havarti, and Gjetost cheese with fresh fruit. You don’t need to be Norwegian, or even Scandinavian to enjoy this luncheon.

This event also provides an opportunity to learn to create a cold table spring time. Food and table setting will be prepared at a free workshop on the day and evening before the lunch. Register for the workshop by calling (320) 760-4431 by May 10. Recipes will be provided to workshop participants. The workshop is also available to a limited number of people from neighboring lodges.

The lunch will be available at First Lutheran Church, 200 E 5th St, Morris, 11 a.m. to 1:30 p.m., Thursday, May 17, The cost is $10 per person, with free hotdogs and ice cream for preschool children. Reservations are not required, but appreciated. Sons of Norway is a Scandinavian cultural organization with deep roots in Minnesota.
